Summertime Is For The Cherries
Living somewhere where I have all four seasons it’s so nice that once the seasons change I get the opportunity to use fresh new produce for all of my recipes. One of my favorites is when I am walking into my local grocery store and seeing bags and bags of fresh shiny juicy cherries. I know I am not the only one either because before you know it these little beauties are hard to find. So I wanted to take every opportunity this summer to use some fresh cherries and let me tell you, I am now obsessed with using them in all of my baking.

Fresh, Frozen, Or Canned Cherries?
Well, personally for baking I prefer to use fresh. I think the taste alone just blows it all out of the water, there’s no competition in my opinion. But, if you really want to make this recipe and well maybe where you live cherries are out of season, you could use frozen or canned. Be careful using frozen cherries just because of the water content once they start to thaw out, I’ve noticed that sometimes it can throw off a recipe a little bit.
When it comes to canned or jarred cherries they just tend to be a bit sweeter than the fresh just for preservation purposes. But you could always make adjustments in the amount of sugar you put into this bread recipe.
Could You Freeze This Cherry Bread?
One thing I love about this bread recipe is its flexibility. It is perfect for almost any time or occasion. That being said you could most definitely freeze this brad after making it, all you would need to do is let the bread cool completely, wrap it in cling wrap, put it in a ziplock bag, then pop it into your freezer.
It will keep for about 3 or 4 months! So the next time you know you’re going to have some visitors the next day or just have a cherry craving, take it out of the freezer and set it on the counter the night before and wake up to a delicious cherry bread.
How To Make Cherry Bread – Step By Step
- Preheat your oven to 350 degrees Fahrenheit. And grease an 8-inch loaf pan with butter. (I’ve noticed butter is the best for not having the bread stick to the inside of the pan.)
- First things first we will need to wash, de-stem, and pit our cherries. Using a cherry pitter will help greatly in making this process go a lot faster, but for me, I have been using a strawberry huller because well that’s what I had on hand.
- Once you have your cherries processed, slice them in half. You could chop them more so that you have smaller pieces but I prefer to give them a little more integrity. Once you have your cherries cut to your desired size put them to the side.
- In a large mixing bowl put in your wet ingredients, sugar, egg, vanilla, milk, melted butter, and mix it all together. You could use a hand mixer or mix by hand whatever is easier for you.
- After having all of your wet ingredients mixed together, it’s time to add your dry ingredients, flour, baking powder, and baking soda. Then mix it until combined.
- If your mixture is too thick feel free to add a little bit more milk to loosen it up a bit, just don’t overdo it!
- Time to add our beautiful cherries! Gently fold the cherries into the batter, you don’t want to mix these too hard or you will start to break up the cherries too much and cause your batter to be a pink/red color. You will also lose the juiciness of the cherries if you mix them too hard.
- Pour your batter into an even layer in your greased loaf pan and bake for 40 – 50 minutes.
- Optional: For some yummy texture add on top some sliced almonds for added flavor.
- Once your bread is done baking let it cool down completely. Once cooled take the bread out of the loaf pan and place it on a serving plate.
- Optional: You could make a super easy glaze for this bread as well, all it is is powdered sugar and some heavy whipping cream. (recipe for the glaze will be listed below)

Instructions

- Wash and pit your cherries, slice them in half, place them in a bowl, and set them to the side.

can you use Montmorency cherries for this recipe? I have just been given a bunch of freshly picked and not sure how to use them as they are not as sweet as the bing cherries...found your recipe and thought I would find out from the source if the Montmorency would work for this recipe.

Your recipe states to mix in the sugar, but it doesn't have sugar (or the amount) in the ingredient list (except for the powdered sugar in the glaze). I started making the bread before I realized there was no sugar listed, so I'll gguess this time, but it would be good if you could add that to the printed form of the recipe. Thanks.
