Blueberries And Bananas, A Match Made In Heaven

One of my favorite fruit combinations is banana and blueberries. Fresh, cooked, or baked, these two fruits are always delicious together. This is why I came up with this amazing quick bread recipe that only takes about 15 minutes of prep time, even less clean-up time, and in the end, you will have the tastiest bread that you can enjoy with a cup of your favorite coffee or tea. This recipe is also perfect for brunches or breakfast, as well as a great quicker afternoon snack.

Blueberries are one of the world’s healthiest fruits; they’re packed with vitamins and minerals that our bodies need! Bananas are another one of the best fruits you can eat — bananas are also the best way for us to get our daily potassium intake. So mixing these two superfruits together just gives us the benefits of two great things!

How To Make Blueberry Banana Bread – Step By Step

Preheat your oven to 350 degrees Fahrenheit.

In a large mixing bowl, add in your dry ingredients — all-purpose flour, salt, cinnamon, baking powder, and baking soda. Whisk the ingredients together well, breaking up any lumps in the flour for an even smoother batter and a softer bread.

After whisking the dry ingredients well, add in the wet ingredients: chilled melted butter (Personally I just pop my butter in a microwave-safe dish and microwave until it is mostly melted but not boiling.), egg, vanilla, granulated sugar, and very ripe bananas.

Pro Tip: Make sure you are using very ripe bananas, using perfectly yellow bananas will not yield a very strong banana taste. The riper a banana gets the more sugar content it starts to have. The soft texture is actually the banana starting to liquefy from all of the sugars creating an amazing banana syrup.

Extra Pro Tip: Do you have bananas on your counter that are getting a bit too ripe? Don’t have time to put together this delectable blueberry banana bread just quite yet? Freeze those bananas! You do not even need to peel them, just toss the entire banana into your freezer — they stay perfect to use for your baking needs for months! When you want to use them, all you need to do is take them out of the freezer, place them into a bowl for about 20 to 40 minutes, and they will thaw out perfectly. No more throwing away perfect baking bananas!

Whisk together all of your wet and dry ingredients in that same mixing bowl. The mixture will be a bit stiff but that is perfectly ok!

After having your batter completely mixed so that all of the ingredients are well combined (without over mixing), add in your blueberries. The best way to do this is to fold your blueberries into your batter. Folding your blueberries into the batter is better than trying to mix them in. During the folding process be careful to not break apart your blueberries and cause them to burst. A gentle fold to just distribute the blueberries evenly will be perfect (to see a demonstration of the folding technique, click here).

Grease a 9-inch bread pan either using butter or a non-stick baking spray.

Gently pour in your batter and place on the middle rack of your oven to bake for about 40 minutes – 50 minutes.

At the 40 minute mark, using a butter knife, check the middle of your bread by pushing the butter knife to the bottom of the pan, if the knife comes out with either small crumbs or perfectly clean your bread is done baking.

Let the blueberry banana bread completely cool before trying to release it from the bread pan, then cut into slices.

Sit back, brew a cup of coffee, and enjoy a slice of this sweet delicious blueberry banana bread — you deserve it!

How To Keep This Blueberry Banana Bread Moist

The key to keeping this bread staying nice and moist is to not overbake it. Overbaking will cause this bread to dry up. The other secret to this super moist blueberry banana bread is the bananas you use! Making sure you have very ripe bananas to use will also help with the moisture content.

If by chance you accidentally overbake this bread, just take a slice, wrap it in a damp paper towel, and microwave for about 30 seconds to bring a bit more moisture back to it!
