This white cheddar peach grilled cheese recipe is a delicious, fancy spin on a favorite sandwich! It is very easy to make for an easy lunch or dinner and is so tempting, cheesy, and fruity that you’ll be dreaming about this grilled cheese!

I absolutely adore grilled cheese sandwiches. I fancy myself a bit of a grilled cheese connoisseur. My love of grilled cheese started as a child, but has definitely continued into adulthood.
I am a bit of a picky eater, especially when it comes to seafood, but the many seafood restaurants of South Carolina make a mean grilled cheese for a vegetarian option for this girl! I am known to order a large glass of Cabernet with a grilled cheese and french fries at a seafood restaurant. Not kidding!
Let’s face it, you’re never too old for a great grilled cheese, especially when you spice it up with some gourmet ingredients and add some fresh peach slices. This is my ultimate favorite grilled cheese!
Ingredients
Lots of Cheese
But what type? For this recipe, I use white cheddar cheese. I buy Cabot’s Vermont White Cheddar Cheese in a block and thinly slice the cheese myself. White cheddar cheese pairs so well with the other ingredients in this recipe and makes for a great gooey grilled cheese.
Swiss cheese is a good substitute or you can use both Swiss and white cheddar cheese!
Sliced Bread
My favorite bread to use for any sandwich is white mountain bread. My Publix grocery store makes the best fresh mountain bread both, white and wheat varieties. Sour dough bread is a great alternative.
Fresh Peach
When you think of grilled cheese, I’m sure peach slices are not the first thing you think of, but trust me, it tastes amazing and adds a great freshness and fruitiness to this sandwich.
To prepare the peach, slice it in half, remove the pit and slice thinly.
Piquillo Peppers
I use pickled piquillo peppers for this recipe and several others. I keep a large jar in my refrigerator from Sam’s Club. They look like Gene Simmons’ tongue! I use 4 peppers in this peach grilled cheese recipe.
To prep the peppers, thinly slice them.
Shallot
Shallot pairs great with the ingredients of this peach grilled cheese. You will saute the onion with the peppers and garlic separately. Then, stuff the grilled cheese with this filling, among other ingredients.

Garlic
For the white cheddar peach grilled cheese, I use 2 cloves of fresh garlic roughly chopped.
Seasonings
I use just sea salt and ground black pepper to season the peppers and onions to stuff in this tempting white peach grilled cheese.
To grease the pan
I use both butter and olive oil when cooking this peach grilled cheese. I start with melting about 2 slices of butter in a large, preheated non stick pan. Then, add a little olive oil in a spray bottle when flipping the sandwich.
How to Make the White Peach Grilled Cheese
Cooking the filling
Heat a large, non-stick pan on medium heat. Add a drizzle of olive oil. Add the sliced shallots to the pan and sauté for about 1 minute. Then, add the garlic and piquillo peppers. Cook for about 1-2 minutes, until the onions are soft.
Then, remove from the pan and place in a bowl to keep warm. Wipe out the pan.
Building the White Cheddar Peach Grilled Cheese
Lay out the bottom half of your bread slice on a clean, dry, work space. A wood cutting board or large plate works great.
Add the white cheddar cheese, followed by the peach slices and top with the onion and peppers mixture. Top with the other bread slice.
Cooking the Peach Grilled Cheese
Heat the same large non-stick pan on medium heat. Add 2 slices of butter to your pan and melt, spreading evenly around the pan.
Gently add your grilled cheese to the pan. Cover the pan loosely with a piece of tin foil. Cook for about 2-4 minutes.
Add a drizzle or a few sprays of olive oil to the pan. Then, carefully, using a large spatula, flip the white cheddar peach grilled cheese sandwich. Cook for another 2-4 minutes, covered loosely with aluminum foil.
The sandwich should be browned on both sides, while the cheese is melty and gooey on the inside. Remove from the pan, and enjoy!
Great with a side salad!
I love serving this white cheddar peach grilled cheese sandwich with a side salad of spring lettuce, topped with a homemade dressing of 2 TBSP of dijon mustard and 2 TBSP of apple cider vinegar (season with salt and pepper), and garnished with sliced radishes and crispy onions.

Notes
You can store extra sandwiches in an airtight container in the refrigerator.
To reheat, prepare a baking sheet by greasing with a little olive oil. Preheat the oven to 350 degrees. Heat for 5 minutes in the oven until warm.
