Who doesn’t love a dinner that comes together quickly, that is absolutely delicious, and a true crowd pleaser! This apple chicken melt recipe is something I have come up with one day as I was looking for something savory I could make with the abundance of apples I have sitting in my fruit bowl.

I am sure as you know, the second you type in “Apple Recipes” on Pinterest you are hit with a million different types of apple deserts, while I love a great apple dessert, I wanted something that I could make my husband and me for a healthy dinner. So I decided to make a simple apple slaw, use some leftover rotisserie chicken I had in my fridge, and some simple condiments. Let me tell you, you will love this recipe, I will be making this a lot more. Even my husband who can be somewhat of a picky eater loved these sandwiches.

Super Easy Apple Slaw

The thing that makes this sandwich so unique is the freshness and crunch of this amazingly easy-to-make apple slaw. All you need to make this refreshing slaw is, a Granny Smith Apple, a few Brussel sprouts, mayo, honey, fresh lemon juice, and salt and pepper. Slice the Brussel sprouts thinly, add to a mixing bowl, slice the apples into matchsticks, add them to the same bowl, add some salt and pepper to taste, mayo, honey, a squeeze of fresh lemon, and give it a good stir and its ready to go! It’sso refreshing even on its own for a side, plus it comes together in less than 10 minutes.

These apple chicken melts come together in a snap and all you need is a few ingredients. I will add the list below to make shopping for these amazing melts a breeze!

  • 1 Granny Smith Apple
  • 4 – 5 Large Brussel Sprouts
  • Mayo
  • Honey
  • Lemon
  • Salt
  • Pepper
  • Sliced Bread Of Your Choice
  • Leftover Rotisserie Chicken (Shredded)
  • Havarti Cheese
  • Mustard

You probably have a lot of these ingredients in your panty at home, that’s one thing I love about this recipe is you don’t have to make some extensive shopping trip just to prepare these.

It is also a great recipe when feeding multiple people because we will be toasting our bread on a sheet pan in the oven so you can put multiple slices of bread on one sheet pan!

Why Havarti Cheese?

Well, I love cheese, all kinds of cheese. And Havarti Cheese is one of those cheeses that just melts so well, it’s super gooey and gives you the perfect cheesy bite. If you have never had Havarti Cheese before I found a great description from this awesome website, you can read more here but here’s the quote I think sums it up, it reads, “Lusciously smooth, Havarti is balanced and mild enough to suit all palates, with the piquant flavors harmonizing perfectly with salads, sandwiches as well as on its own.”

If you’re not a fan of going outside of your cheese comfort zone though, Cheddar is closely related to Havarti cheese, so you could absolutely use Cheddar cheese in place of the Havarti in this particular recipe.

How To Make Apple Chicken Melts – Step By Step

  • Preheat your oven to 425 degrees Fahrenheit.
  • Wash your apple and Brussel sprouts and give them a quick dry.
  • Slice your Brussel sprouts in thin slices, since the leaves of the Brussel sprouts are all separate it will give them that nice shredded look of traditional coleslaw.
  • Next, slice your apple into match sticks and add the Brussel sprouts and apple slices into a small mixing bowl.

  • In the mixing bowl with the apple and Brussel sprouts, add in salt and pepper to taste, a squeeze of fresh lemon juice, honey, and mayo, stir it all up and you have a beautiful apple slaw that you can set to the side for now.

  • In a small dish combine mustard, honey, and fresh ground black pepper, this is our honey mustard sauce, set to the side.
  • On a baking sheet lined with a silicone baking mat or parchment paper lay down your bread slices and spread butter on one side.

  • Flip the bread slices so that the butter side is on the baking sheet, then spread the honey mustard sauce onto each slice of bread.

  • Next, add your cheese slices onto the bread, I used two slices of cheese per bread slice.
  • Place the baking sheet into your oven for a few minutes so that the cheese can melt.
  • Next, add your shredded rotisserie chicken onto two of the slices.

  • Next, place the baking sheet back into your preheated oven to finish melting the cheese and warm up the chicken.
  • Take out the baking sheet once the cheese is bubbly hot, on a separate plate place the bread slice with the chicken onto the plate, add your apple slaw, and top with the remaining bread slice.
  • These are best when served right away while the chicken and the cheese are nice and hot!
