Chicken Salad with Apples & Curry Dressing


  • 6 cups cut-up cooked chicken
  • 1 1/2 cups diced celery
  • 2 cups apples, unpeeled, cored and diced
  • 1 1/2 cups seedless grapes (green and red halved)
  • 1 cup pineapple tidbits (canned in own juice, drained)
  • 1 cup slivered almonds (reserve some for garnish)
  • curry dressing of your choice
  • mixed salad greens


Cut cooked chicken in bite-size pieces. Combine with celery, grapes, nuts and pineapple. Fold in curry dressing. Server on salad greens. Garnish with a few almonds. Serves five to six.
