Apple Sauce Muffins

Ingredients:

  • 6 Tbsp butter
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 2/3 cup brown sugar
  • 1 1/2 cup chunky applesauce

Preparation:

  • Heat oven to 375 degrees. Line 12 cup muffin tin with bake cups and set aside
  • Melt butter
  • Sift together flour, baking powder, baking soda, cinnamon and salt into a large mixing bowl
  • In a large bowl, wisk together eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth
  • Pour the apple mixture over the flour mixture. Mix with a spoon until combined (it is ready when you can not see any traces of flour)
  • Fill the bake cups about 2/3 full with batter
  • Bake for 20 minutes or until light brown. (Insert a knife in the middle of one muffin — if it comes out clean then they are ready!)
